Virtually all ornamental roses have edible petals, but generally the most used in cooking are those that have that characteristic scent. Not all are scented, and these do not have a very strong flavor. Generally, only the petals are used, as the base of the petal is a bit sour.
They can be used at the consumer's taste, in an infusion or directly to enrich recipes. They can also be used to make candles and handcrafted cosmetics.
